Classic Gourmet Burger

A rich but balanced burger with juicy beef, sweet onions, cheddar, crisp lettuce, and a sharp, creamy sauce.

Method

  1. Cook the onions in a skillet with a little oil and a pinch of salt over medium-low heat until deep golden and soft, about 15 minutes.
  2. Mix the mayonnaise, ketchup, and Dijon in a small bowl for the sauce.
  3. Divide the beef into 4 loose patties and season each side generously with salt and pepper.
  4. Sear the patties in a hot skillet for 3 to 4 minutes per side. Add cheddar during the final minute and cover briefly to melt.
  5. Butter and toast the buns in a separate pan until lightly crisp.
  6. Assemble with sauce, lettuce, tomato, burger patties, and caramelized onions.

Kitchen note

Handle the beef lightly. Compact patties cook up dense, while loosely formed patties stay juicy and tender.
