Method
- Cook the onions in a skillet with a little oil and a pinch of salt over medium-low heat until deep golden and soft, about 15 minutes.
- Mix the mayonnaise, ketchup, and Dijon in a small bowl for the sauce.
- Divide the beef into 4 loose patties and season each side generously with salt and pepper.
- Sear the patties in a hot skillet for 3 to 4 minutes per side. Add cheddar during the final minute and cover briefly to melt.
- Butter and toast the buns in a separate pan until lightly crisp.
- Assemble with sauce, lettuce, tomato, burger patties, and caramelized onions.
